  • 60 g Beamy mix for Egg
  • 240 g cold water (4°C)
  • 200 g vegetable oil
  • 30 g vinegar and lemon oil
  • 12 g Dijon mustard (optional)
  • 3 g salt

PROCEDURE

In a small bowl, whisk the egg alternative mix with the cold water to form a batter.

In a tall container, add the batter, vegetable oil, vinegar, and mustard. Start blending with an immersion blender for 2 minutes, incorporating air until you achieve a creamy and homogeneous emulsion.

Taste and adjust the salt.
