PROCEDURE

Take the orange and obtain its juice and zest.

Pour the milk/vegetable drink into a saucepan, along with the vanilla bean and orange zest, and let it heat. It should not boil.

Meanwhile, in a bowl combine Beamy egg alternatives mixture with the cold water and mix well with a whisk until a homogeneous, lump-free mixture is created.

In another bowl pour the starch, sugar, rehydrated egg alternative, and orange juice and mix well.

Remove the vanilla bean and orange peels from the hot milk and pour it into the other ingredients, stirring with a whisk until smooth.

Transfer everything to a saucepan and cook until a nice thick consistency is achieved. This will take about 10 minutes or so.

Transfer the mixture to aluminum ramekins. Cover with foil and chill for a couple of hours in the refrigerator.

Once cooled, remove the puddings from the molds and garnish to taste with chocolate, jam or fresh fruit.
