  • 60 g of Beamy mix for Egg
  • 240 g cold water from refrigerator
  • 1 avocado
  • Salt & pepper to taste
  • Vegetable oil

PROCEDURE

In a bowl, pour the entire content of the Beamy mixture for egg alternatives and cold refrigerator water (4°C) and mix with a whisk until smooth.

Heat a little oil in a frying pan and pour the mixture inside.

Cook over low heat and, when the mixture starts to set, stir with a spatula so that the mixture breaks down and you get the scrambled effect. It will take about 4-5 minutes of cooking time in all.

Warm the piadinas on both sides.

Clean the avocado and dice it up.

Stuf the piadinas with the vegetable scrambled eggs and avocado, adjusting salt and pepper to taste.
